The other day in a blog post I mentioned a potluck we had at Betty’s and the tasty Crawfish Mac and Cheese that was served. Well, Tom and Anne gave me the recipe to share with you. So here it is….you can substitute shrimp for the crawfish with the same wonderful results.
1 pound of Pasta (any pasta)
8 ounces of Boursin Garlic Cheese (soft spreadable cheese)
8 ounces of Cream Cheese
8 ounces of Velveeta
1 quart of Heavy Cream
1 pound of Crawfish (cooked) or shrimp
Seasoned Breadcrumbs
Heat and whisk the heavy cream with the Bourse, cream and American cheese until smooth. You can add other cheeses to match your flavor profile and preference. Add the cooked pasta to the cheese along with the cooked crawfish and place it in a casserole dish. Top with seasoned breadcrumbs. Cook at 350 degrees for 20 minutes.
After seeing the recipe I could understand why the dish tasted so good. With a quart of heavy cream and 24 ounces of cheese even a sneaker would taste good mixed with that combination!!! But preparing this dish for a special occasion would be nice.

ReplyDeleteI found your blog a few weeks ago, I have really enjoyed reading it. One day I hope we be a full timer too. But for the time being, we enjoy the 2 week summer trips to the mountains and weekend get a ways. Perhaps our paths will cross in Colorado.
