Ribs in Beaumont

Yes, I know, I haven’t written about the Chicken Run last Sunday, but again I have a lot of photos and I still have this thing about using every photo, so that will have to wait another day.

Thursday we left Betty’s RV Park as did many others who spent the month. We chose to drive just 150 miles west to Hidden Lake RV Park in Beaumont, Texas.  It’s a Passport America park so cost us $17.50 a night with a three night maximum.  Jim and Linda and Richard and Lynn also came along.  [Unfortunately Jim and Linda only got 20 miles out of Abbeville before breaking the main leaf spring on one of their RV axels. Luckily a repairman from Crowley was able to find another one over time and  was able to installed it right there on the side of the road.  They arrived yesterday.]

We bought a couple racks of St. Louis style ribs at Robie’s before we left, so Jim got to cooking.  Oh, folks, this was his BEST rack of ribs EVER!!!!  So tender and juicy…..yummmmmm.

Lynn made a flavorful potato salad adding green pepper, cucumber and carrots along with the celery and onion.  Nice addition…got to remember to do that…easy way to add more veggies in your diet.

It was sunny outside although a bit windy, but we sat outside anyway and had our beer and wine while the ribs cooked.

This is a nice park with friendly staff. We’ll enjoy one more day here and leave tomorrow.
