I've become a fan of Terry's food blog RV Life and Food.  Terry and hubby, John, are gate guards and both are great cooks....John barbecued for rig workers.

Terry comes up with some very innovated recipes and today she found a real winner with a salmon patty using chicken stuffing.  I made it tonight and it came out fabulous!  Usually I make salmon patties with eggs and crackers, but they crumble when I turn them over.  But Terry's recipe with the stuffing mix stayed together and browned up nicely.

Highly recommend Terry's recipe.  Give it a try for yourself.

    This sounds delicious and made from things I like, of course there aren't any I don't like.. Thank you, very much.. Is there any way to put a 'fish-catching' score for Jim's trophy's?? Are you missing gate-guarding, yet?? What are the parks or campgrounds y'all cover?? I'm trying to send y'all some business!!! Y'all are too, also!!

    1. Jim's been doing pretty good with his fishing. Yes, we both miss the gate guarding gig...the owners of the ranch we worked on were very nice. I also miss kibishing with the truck drivers. We are area managers for seven national forest campgrounds in southern Colorado. Our biggest campground (Big Meadows) has been under reconstruction for three years now, but should be opened next summer. We are staying in Park Creek Campground some 8.5 miles west of South Fork, Colorado and, yes, it is right on the creek which lulls us to sleep at night. We also have Tucker Ponds with two magical ponds full of trout, Highway Spring Campground newly renovated with spectacular views, Lower Beaver Campground with 17 sites that can accommodate any size rig, Upper Beaver Campground for great tenting sites amongst the trees on Beaver Creek, and Cross Creek Campground just above Beaver Creek Reservior again with good fishing.

      If any of our blog readers are every in the area of southern Colorado we'd love to have you stay with us.

  5. Love the picture! Beautiful! I have started adding a "large" tablespoon of Mayonaisse to our salmon patties....it makes them hold together better and it tastes good too! Tell Rita and Jerry Hi for us! Have a good summer!
