Busy at Home

We have been on a whirlwind pace since we got back to Alamosa last Monday.  We have a few people we have dinner with soon after we arrive in town and we did that again this time.

First dinner we usually have is with Greg and Nina.  Historically we have gone out to eat at the Blue Foxx at the golf course, but they closed down while we were away this winter.  After a major kitchen renovation, a new restaurant opened at the golf course Wednesday - Mulligans on the Green - with Chef Kevin Martinez.  His dad has a very successful restaurant in Monte Vista, The Mountain View.

The restaurant waited to publish their menu until early Wednesday morning and we were kind of surprised at the high prices, but everything is cooked fresh and to order...even their steaks are cut to order we understand.

So we went with Greg and Nina to dinner at their opening dinner. We were surprised to be greeted by a friend, Kaitlin, who was the new hostess.
 I was in a rare mood and asked our waitress, Star, if she would ask the Chef if I could look at the kitchen.  He welcomed me in, so I looked around at the "spic and span" kitchen and all the gleaming equipment.

Well, after looking at the menu I told Jim "happy birthday, happy anniversary and merry Christmas.  Go ahead and order the $34.99 16 oz. Rib Eye Steak".  It came with asparagus, garlic mashed potatoes with mushroom gravy.  Jim said it was the best steak he has even eaten...and that is saying a lot from Jim! Greg followed suit and also had the rib eye steak.

I had the Vegetable Pasta using spaghetti squash instead of noodles.  It was very, very good with additional vegetables.

 Nina had the Parmesan Shrimp Pasta and said it was very good, especially the sauce.

Here we are by the windows overlooking the golf course...very pretty.

After our very satisfying dinner we returned to Greg and Nina's house by the golf course and had after dinner drinks, discussing Nina's recent retirement and encouraging them to buy an RV and travel.  Of course we tempted them with tales of our travels this winter.

  2. I am getting hungery for one of those steaks too! No mabe Parmesan Shrimp Pasta oh well I'd have 'em send one of each out of that kitchen. Looks sooooo good.
