Quesadilla Casserole

I’ve seen these McCormick Recipe Inspirations with pre-measured packets of spices in the grocery store. I thought it was certainly a good idea for cooks who wanted to try a recipe, but didn’t necessarily have all the spices on hand. It would be convenient for RVers also, whose space is limited.  But none of the recipes really intrigued me…until now.  Although I had all the spices the recipe called for I didn’t have the recipe!  Yes, I did, I spent $1.99 for the package because I wanted to recipe….yes, I know pretty outrageous, but I got a great recipe.

I did use ground turkey, but you could use MorningStar Crumbles and make this a vegan meal.  With the beans, corn and tortillas along with tomato sauce it was a filling meal.

It came out wonderful and very, very tasty.  We had the Mossman’s over for dinner and they said “this is a keeper”, so for $1.99 I have a great recipe that I think will be great for potlucks at rallies.  It will serve 6-8 people, or 4 hungry folks like us as I didn’t have any leftovers.  Here’s the McCormick website with the recipe.  If you don’t have all the spices I encourage you to buy the McCormick Recipe Inspirations for this casserole for yourself.  It’s worth it!  If you keep a lot of spices here’s what you’ll need.

2 t. chili powder
1 t. ground cumin
1 t. minced garlic
1 t. oregano leaves
1/2 t. crushed red pepper (opt)
