Saturday Betty was making sausage and turkey gumbo for everyone in the campground….yummooo!!!
I was making a pineapple upside down cake to bring, but opened crushed pineapple instead of sliced pineapple…not once, but twice. So here I was with two 20 oz. cans of crushed pineapple…..what to do? Da-da-dah, the calvary arrives in the form of Terri with her blender and a bottle of rum. I added lemon juice, sugar and a bunch of ice and we had Pineapple Daiquiris!!!!! I hammed it up a bit…oh, and that was before I had any to drink.
It was an absolutely perfectly gorgeous day…sunny, 69*, not a cloud in the sky. We had been inside for so long because of the cold and dreary weather, clothed in coats, hats and gloves. We were all excited to dig out the capris, shorts and short-sleeved shirts! Rich really relished the sun as you can see. Before long everyone was joining in.

Even Chorizo (aka “Weenie”) enjoyed being in the sun.
The gumbo was wonderful, of course, and was filled out by the rest of us bringing salads and desserts.

What a wonderful day. We are suppose to be having a least a week of good, sunshiny weather….we’ll take it….it’s about time!!!!!
